It's hard to believe that a few weeks ago, it's super hot but now we are in the high 40s which is cold for me. Please don't raise an eyebrow on me for thinking that high 40s is already called. I grew up in the tropics so I was used to having warm weather all year long. Having said that, I have to find some dishes that I can serve for my family that would warm us up during cold months. The new dish that I recently tried making is Gumbo. I saw this on a magazine and thought it looks yummy.
The original recipe uses different vegetable but since I have some freshly picked veggies from my garden, I used them instead. You can find the recipe below.
INGREDIENTS
- 1 tbsp coconut oil
- 1 large onion, chopped
- 1 bell pepper, seeded and chopped
- 2 celery stalks, chopped
- 1 teaspoon cayenne pepper
- 1 tsp chopped fresh thyme
- 1 quart canned tomato sauce (homemade)
- 1 chicken boullion cube
- 1 pack polska kielbasa (sausage)
- 1 cup sliced fresh okra
- 2 medium suze ehhplants, sliced
- 1 cup green bean seeds
- 2 cups peeled deveined medium shrimp
- 1/4 tsp cumin
- 5 Thai Peppers, chopped
- 1 tsp garlic powder
- salt and pepper
- Steamed rice
PREPARATION
My daughter love shrimp so this is a perfect dish for her. My son and FH loves smoked polska kielbasa so they too lovethis. For me, the Thai pepper that I added isn't enough so I chopped some more and put it in my bowl to make it more spicy!
- Heat oil in heavy 13-quart pot over medium-high heat until very hot and almost smoking. Add the sausage and cook it until each sides are brown.
- Add the veggies and cook stirring frequently, about 10 minutes.
- Add the tomato sauce, and boullion cube and boil for another 10 minutes.
- Add shrimp to the pot and cook shrimp until just opaque in center, stirring often, about 5 minutes. Season gumbo to taste with garlic powder, cumin, salt and pepper. Garnish with minced parsley and serve with steamed rice alongside.
This looks delicious!! I've never made gumbo before because it seems like a dish that only "real" cooks should attempt to make. However, I think I might try this.
