Lasagna and Choc Cake

The day before my FIL's birthday, he told me that he is craving for something that his wife used to make. I asked him what it was and he couldn't remember what it is called. n the day of his birthday, I baked a pan of lasagna at home and brought it at his house. He was so happy and told me "That is what I am craving for!". Hmmmnn, glad you liked it Dad. Anyhow, the lasagna was sold out, no left over the next day lol.

My friend Raquel brought a chocolate cake for Dad. I really don't like sweets but this one is an exception, it is so delish! Thanks Manay!

Home Made Tocino

Lately, hubby was craving for tocino. I can't cook any because we did not find any at the oriental store. However, I remember buying a tocino mix the last time we went to the store so I tried to make some. I bought a pack of pork stew meat and follow the direction from the Mam sita pack. I marinated it for 24 hours and cooked it the next morning.

Thanks to these packages because we can really be a good cook even if we don't know how to cook lol.
The result was fabulous. EJ and Rylie even liked it! To add a little twist, I sprinkled some steak seasoning when I was cooking it.

Hubby and Rylie ate it with rice and egg while I ate mine with Kimchee hehehe. I am not really fond of sweet stuff so to cntrast the sweetness of the tocino, I ate it with something spicy.

I know, it's not really a homemade because I used some tocino mix but let's just pretend that it is lol.

Have a safe and fun weekend everyone.

Labor Day 2010

Good day everyone, how was your Labor Day celebration? Our's was mellow, we went to the store to pick up some school supply for our daughter then we visited my FIL for a coule of hours. We came back home and proceeded to a a party where a Filipina invited us over for a labor day cookout. My husband made leche flan to bring. There are so many foods (Pinoy foods, yummy!) It was a Fil-Am family day yesterday at her house.

Here's Rylie with Tiffany. My daughter is a month older than her. Tiffany however was not admitted to a kindergarten because because she was one week behind the cut off age requirement. It's very strict in here, if you are not on the age requirement, you won't be admitted. Unlike in the Philippines where you can be enrolled in grade one even if you are younger than the normal age.

A new Filipina I met yesterday, she was grilling chicken BBQ hehehe. Here's Chelsea's new Mommy. She has three sons so Chelsea is her only daughter lol. It's interesting that Chelsea still remember us. I am glad that Chelsea is being well taken care of.

EJ was not a happy camper, "Mommy, the girl's won't shre the bike" he said. So Ate Agnes dug out her kids toys and let the boys played with it. Now, they're all happy.
Oh look at those yummy foods. I did not eat much but, I BROUGHT SOME HOME LOL. Alrighty folks, I am doing some laundry right now, thanks for dropping by.

Sandwich Recipes

Having a school girl is a joy and at the same time stressing sometimes lol. I am still not used to her being away from my sight so I am always worried. Worried of how she acts, how she is doing in school, and all that stuff. We asked Rylie if she wants to try the hot lunch being served in school but she did not like the idea. At first she said she will try it but I told her that whatever will be served there, that is what she will eat. So she decided for me to just prepare her lunch.

So every night, we would talk about what she wants to eat the next day and that is what I prepare. For breakfast, she always want to eat coco wheat, oatmeal, waffles, and sometimes I served fried rice.
She prefers canned fruits or fresh fruit for snacks, and most of the time I make sandwiches, pasta salad, or broccoli mac and cheese for her lunch. There are days that she just want snack and just eat lunch at home.
I received these recipes of lunch sandwiches that most kids will like from parents.com. So for those who prepare lunches for their kids like me, you might want to check it out below (not a sponsored post).
We’ve assembled inspired recipes that will please your whole crowd. Trade your standard ham-and-cheese for a Cuban, a grilled comfort food piled with roast pork and melted Swiss. The secret ingredient in our pulled pork sandwich is root beer. How’s that for innovative?

Lumpia with lots of Veggies

While a lot of people gave me fresh veggies, I decided to make some lumpia. I used the last pack of my lumpia wrapper. I love to put a lot of vegetable in my lumpia because our kids love it so it's one of the ways where I can feed them lots of veggies hehehe. I don't really follow recipes when it comes to making lumpia esp. on the ingredients. Whatever is available in my fridge, that's what I use.

I always invite my FIL to come over whenever I make lumpia because he loves it too. I remember sending three pieces of fried lumpia to my BIL Dave when hubby went to his garage and when he saw me, he said "You should open a resto and offer that delicious 'whatever-you-call-it' food that you gave me coz it was delicious!" It's nice to hear that compliment, although they don't know that my lumpia is just generic lol, there are better lumpia than mine hahaha.
I freeze half of it so I can just fry it the next time that hubby and the kids crave for it.
