Bread Pizza Breakfast

I was  excited to see the loaf of bread in the box that Glutino have sent me for review.  I thought of making breakfast  using this gluten-free bread.  I have asome left over BBQed chicken  so I debone and chooped them up.   I sliced some tomatoes and fresh chives  that I got from my garden. 

 This is prettymuch the ingredients.

• Glutino bread
• sliced tomatoes, left over chicken
• chives
• cheese

 Just  fill the bread with the  above ingredients and bake it for 15 minutes in a 350 digfrees oven.

 After 15 minutes, here's our yummy breakfast.

JUst one slice of it would fill you up.  With a glass of juice and some fruits, our breakfast  was awesome.

 My lovelies don't like it when I take pictures of them while they eat lol.

This is the kind of breakfast they enjoy the most.  It is easy to prepare and you can choose whatever ingredients you put in it.

Happy Fourth of July

 We went for an early morning walk around the neighborhood this morning.  Since we planned on watching the parade at ten, I decided to just prepare a fast meals such as  waffles and fruits.

 Instead of using maple syrup, we used  real honey that a friend od mine gave us when we visited their farm.  I picked some alpine strawberries from the garden and paired it with the  watermelon balls that we scooped a couple of days ago.  To add a hint of blue, I picked  a morning glory flower  to make the  picture  complete wirth red, white, and blue.  (I know that flower is like a bluish purple but it's the closest I could get).

Shrimp kebabs with avocado and tomato salsa is great for dinner.  I marinated  the frozen shrimp  with the Wasakan Umami Ponzu sauce that I got from Try the World.  The sauce is sweet, salty, and tangy. It is made of soy sauce and  citrus, it is  a great marinating sauce for  seafood.  

 I used a pack of frozen shrimp.  I  marinated it with the  sauce for about 30 minutes and put them in bamboo skewers.  Sprinkled  salt and pepper and grill it.

My family is not used to eating avocado as a savory side dish but for a change I tried it, I think it's a great  combo for the shrimp.

It has chopped tomatoes, chopped baby cucumbers, basil, and scallions.

Red, White, and Blue Brownie

I had a  very bad  stomach cramp yesterday so I wasn't able to do the things that I scheduled to do.  Glad my daughter baked the brownies that Glutino have sent me  along with other goodies to review.  We don't do traditional  cookie decorating or cake  for  the 4th of July so I thought of just spicing up this brownies for our  red, white , and blue  celebration.

 I was going to  use red, white, and blue  sprinkles but I got to thinking, that  would be too much sweets so I just use  the strawberries and cherries to represent the red color, the dish for the whgite and blue and I also  used some of my bento  cuties.

 Again, this is not a traditional red, white, and blue that you see because it has  brown in it but it is close.

 My son couldn't wait to  get his share for this  treat.  He has the most sweet tooth in the family so he get so impatient when his Mom has to  take pictures first they can enjoy the goodies lol.

 I wish I have a cherry tree in my backyard because I love this fruit.  I can eat this all day.  It is a little on  the expensive side  but I buy it once in a while, just because.. I love it!

 Strawberries are one of my children's favorite  fruits.  I love it when it is in season because they are  cheap.  They tend to be very expensive during the winter times.

 For those who asked me where I get these cute bento accessories, a friend of mine from Japan sent me those.  I can't find them here in the US.

 The  pocls with hears, I bought it from Dollar tree.  It came with cupcake  papers.  I didn't really use the papers, I just bought it because of the cute picks.

 I wish I have red stars too.  I only have blue and white, if I have red ones, it could have been a perfect  thing to use for tri-star fourth of Jily   theme.

I like getting baking stuff even though I don't like to bake because of my daughter.  She gets to explore her love of baking.  Now, she hasn't  leanr quite a bit yet how to  clean up everything after she bake but it's okay, that's what Mpther's are for, right?  I hope you guys have a good  Independent Day celebration!

Eggplant and Beans

Aside from my leafy vegetable that we have been enjoying, we are also starting to enjoy the kohlrabi, green beans,  and eggplants.The first batch of beans that I planted got affected by the frost that came  late  Spring.  Only two of them survived but it's okay because my  daughter love the ones that I can pick now. 

 I have picked 4 eggplants already and made some  "tortang talong", a Filipino eggplant omelet.

 Ingredients:

• 3 eggs
• 2 eggplants
• scallions, chopped
• 1 roma tomato, chopped
• 1 shallot 
• 2 tbsp cooking oil
• salt and pepper to taste
• 1/2 mozzarella cheese

Preparation:

• Boil some water in a pan and  put the eggplant in it.  Cook it until the skin is  all wrinkly.  Take it out from the pan, rinse it with cold water and  peel the skin (I did not remove  the skin on this because the  eggplants are still young), retain the  stalk/stem for easy handling.  Mashed the  eggplant  until it is flatten.

•  Beat the eggs and add the  other ingredients.  Soak the eggplant in the egg  mix.
• Put the oil in a hot pan and  fry the eggplant until it is golden brown.  Flip it and  cook the other half.

 Eggplant omelet is good to eat with steamed or friend rice.  You can dip it soy sauce or  you can add ketchup or sriracha in it.

 I cooked this for my husband's lunch at work.  He love  eggplant omelet.  I can tell you that homegrown  eggplant  tastes a lot better than store bought because you can cook the ones you pick from your garden right away.

My daughter can eat green beans pretty much in any meal or just about any time of the day.  She loves her green bean.  I can remember when she was about three years old, she woke up at 3 o'clocl in the morning and asked me to give her some green beans, lol.  Below is the  potato cakes, bacon, achara, and green beans that she had for breakfast.

 This one here is the dinner  that we had with friend chicken, steamed beans, and mashed potatoes.

Yamaimo Soba Noodles with Veggies and Spam

Yamaimo Soba noodles are made with  yam extract and buckwheat, they are sift and nutty when cooked.  This is one of the many goodies included in this month's box from Try the World.  I have never tried making this  before but when I pre-cooked it, it reminded me of the local noodles that we have in the Philippines, we call it  pancit bato.  

As I was thinking of what to cook or how to cook it, I went to garden and   got some  veggies.  I was going to make the soba noodles into a salad as indicated in the instruction in the box said that it isgood to serve with broth or as a salad.  But then, I thought why not make it like how my father would cook our pancit bato.

 So here's the simple recipe for Yamaimo Soba Noodles with Veggies and Spam:
Ingredients:

• 1 lemon
• Tri-color bell  peppers
• A handful of   kale
• 1 dsmall piece of ginger.  diced
• spam
• 1 shallot
• 1 tbsp olive oil
• 1 tbsp soy sauce
• salt and pepper to taste
• 1 pack Yamaimo Soba Noodles
• 5 cups of water

 Cooking Direction:

• Gather up your ingredients and sliced them up according to desired  thickness.  
• Zest the  lemon and sliced it up.  
• Boil the water, cook the noodles until al dente.  Remove excess water.  incorporate the  kemon zest and set aside.
• Put the oil in a hot pan.  Fry the spam until it's lightly brown.  Add the shallots then add  the veggies.  Cook for  5 minutes and turn off the  stove.
• Add the  soba noodles, mix it all together.
• Serve with a lemon wedge to squuze on top of the dish.

I used this Japanese serving dish to put the noodles in.  We got this dish from a Japanese friend as a wedding gift.  

 We ate it with Italina  bread baked  and topped with cheese.

The watermelon milk shake was a perfect refreshment for the dish.

The kids liked the taste of the dish but they didn't like the texture of the noodles.  My husband thought it was tasty but just like the  kids, he also wasn't fond of the texture of the soba noodles.
