This is my first time incorporating corn and peas into a pasta dish. The kids loved it so I have made this twice already. The first time I made it, I did not put tomatoes and thought it needs a little bit of tang so the second time, I added tomatoes and it tasted so much better. Below is the recipe..
Ingredients:- 1/2 box of linguine pasta
- 2 chicken breast, cubed
- 1 cup of frozen corn
- 1 cup of frozen peas
- 1 tsp. of fresh minced basil
- 1 tsp cumin
- 1/2 cup ranch dressing
- 1 tomato, sliced
- 1 small shallot
- 1 clove of garlic, crushed
- salt and pepper to taste
- 1 tbp olive oil
- 1 cup of grated 4-cheese mix
Direction:
- Boil the pasta according to direction on the box. Drain the water when al dente, set aside.
- Put the olive oil in a hot pan. Brown the chicken cube, then add the shallot, garlic, tomatoes and the frozen veggies.
- Add the ranch, cumin, salt and pepper.
- Add the cheese and pasta when the meat and veggies are done
Just spread the basil on top for garnish and enjoy!
My husband enjoys pasta dishes but we limit our intake of pasta so I just make it once in a while to satisfy his craving.

ReplyDeleteI would never have thought of putting peas and corn in pasta either. It sounds like it was a big hit with your kids though! Mine don't like tomatoes so I would not put them in even though I like them!

ReplyDeleteThis looks so good. I love how you worked veggies into it as well. If your looking for low carb, you could even swap the noodles with zucchini noodles using a spiral slicer.
