This month is Celiac Awareness month so I will be featuring some yummy gluten free treats here on the blog. First bite is this brownies I baked over the weekend with walnuts and coconut. Here is what you need:
- 1 pack Glutino gluten free pantry double chocolate brownie mix
- 2 eggs or 4 egg whites
- 5 tbsp melted butter
- 1/2 cup coarsely chopped walnuts
- 1/4 cup sweetened coconut shave
Procedure:
- Preheat oven to 350 degrees. Spray 8x8 inch pan with vegetable oil.
- In a large bowl, beat eggs for 3-2 minutes. Gradually add dry mix. Beat to moisten.
- Add butter and stir until combined.
- Fold the nuts and lightly mix.
- Sprinkle the coconut shave on top.
- Pour in prepared pan and bake for 25-27 minutes. Cool completely.
- For best result, freeze 1 hour before cutting. It makes 27 mini bite brownies.
I cut it into large pieces at first but decided to cut it into mini bites since it is very rich.
I tell you, the walnuts and coconut added great flavors to the brownies.

ReplyDeleteI can only wish gluten-free products are more widely available here. It's so pricey when I find some. I just had quinoa rice today and it's crazy expensive for less than a cup. It's not sustainable for us. Hopefully, we'll get more supply here as the demand goes up. :)

ReplyDeleteGlutino is my favourite Gluten free brand! I love their brownies! They are so good that I have never added to them!! I think adding the nuts and coconut would be delicious!
