Twinkle Sprinkle Cupcakes #HappyBirthday EJ!

It's my son EJ's 9th birthday today so I baked some gluten free Twinkle Sprinkle Cupcakes with Pistachio Cream.  I am not a baker so I rely on  box mixes when I have to bake .  Luckily,  Glutino  has a complete pantry of  baking goodness.  You can find the recipe below.
Ingredients:
  • 1 box of Glutino Twinkle Sprinkle Cake
  • 1/2 cup softened butter
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 cup milk
  • a packet of red and green sprinkle
  • 1 tbsp  pistachio cream (optional)
I used my silicon cupcake molds but I only  have 8 of them so I have to bake twice. I have to get me another set of these.

Procedure:
  • Preheat oven to 350 F
  • IN a large bow or mixer beat butter until fluffy.
  • Add eggs, vanilla, and milk  and continue to blend.
  • Add dry mix, continue mixing.
  • Add 1/2 of the green and red flakes to batter and continue to mix
  • Using a pre-greased  cupcake or muffin pan, scoop batter into pan.
  • Sprinkle 1/4 on the top of  scooped  cupcakes that are ready to be baked
  • Baked for 26 minutes.

You can put frosting or icing when the cupcakes are cooled down.  I prefer  cupcakes with no icing, it's too much sugar for the kids!
My son would be happy when he comes home, he would have something to snack.  We also got him an ice cream cake from Dairy Queen because he  requested for it.  Whatever will be left for these cupcakes, we will take it tomorrow on our road trip.  We are taking them to Kalahari for his birthday.

Ice Cream Cake

Mr. Burrito wanted a n ice cream cake for his birthday so that's what we  got.  We bought it at Dairy Queen.  I must say that it was pretty good!
I love the cookie crumble or oreo crumble in the muddle of it.
 The only thing about ice cream cake is, you have to eat it right away when you sliced it because it melts if you don't.
 This is our first time  having an ice cream birthday cake.
I have had ice cream cake before but I didn't really think too much of it till yesterday, it was pretty good!

Chocolate Cake

If there's one family that never  forget to thank Veterans on Veteran's Day is the Mascio Family.  They are the most down-to-earth people I know.  They don't act like they are above anyone else even  if they belong to the  clan of Doctors.  Every year, they give the veterans from our street  a cake to thank them for their services.  I think that it is so sweet of them.  Not many people appreciates Veterans you know.  
I believe this comes from Guss's Goodies.  A popular place here in Weirton when it comes to  cakes, cookies, and other sweet treats.  I like their cakes except the  thick layer of  icing.    I mean the icing is good itself but  it is so thick that it would kind of make you feel sick just by looking at it lol.
Anyway, our heartfelt thanks to the Mascio Family for always remembering lour Veteran at home.  It really means a lot!

When I Turned 36 - Two years Ago 365/294

It's funny to think that as we get older, we really don't care to have a bash celebration for our birthdays. Just to spend time with our family is better than having a big party. I celebrated my  ????? birthday at home with my husband and kids and we had fun.  Hubby bought a cake and Rylie and I made a wish and blew the candles hehehe..

October 24, 2011:

  • I was so busy today.  Ms. Burrito threw up all over the place when she was about to leave to school this morning.  So I called the school and let them know that she  is sick.  She had an upset stomach and we let them rest instead of going to school.  We picked up her homework at school and she did it when she felt better this afternoon.
  • I made some sisig for me and hubby and pork chop for the kids with broccoli for lunch.  Hubby made some  mac and cheese for dinner.
  • I did  two baskets of laundry earlier this morning.    Time flies, I have some task to write but it is past ten now and haven't   half done yet huhuhu.  I am beat!

Cakes - P365 # 161

This is the birthday cake that hubby bought for my birthday. It's a marble cake and I thought it was pretty good.
There, now you now how old I am hehehe.  Two more years and  a new chapter will begin. I can't believe I am that old because I feel like I am still in the 20s weee.  Although my appearance looks older than my age,  I feel younger hehehe.
This is the cake that the kindergarten had during their closing party.
June 12, 2011:
  • It's been 3 days that we don't have water and it's  agonizing.  Our are was the one that lost the water supply first and now we are the last that doesn't have it yet.  Most  part of the town has water  already but us.  We went to my niece in law to take shower last night and also refilled  the water for our bathrooms.  Please dear Lord, let us have water today...
  • I need to do laundry, wash dishes, and cook but I can't.  It sucks not having water, I feel like we live in a very isolated place in Mars wahhh.  Oh well, I better read about this asset labels before I lose my mind completely lol.
  • We are going to church at noon and go to Dad's afterwards.  I might do my laundry over there if our water doesn't comeback yet.

Strawberry Cake

I can't let this week pass by without participating to the Food Trip Friday and Yummy Sunday even if my schedule is full hehehe. Addict to blogging, that's me! Nah, not anyone's birthday, my husband just had a sweet tooth attack so we bought a cake. Every time you buy a cake in Korea, they give you candles hehehe. We get the candles because its fun for the kids!
